What if butternut squash soup had a different broth?

Straight from my kitchen, here's the latest recipe to make its way onto the blog. As always, it's rooted in Indian flavors, easy to make, and perfect for sharing around your table.

Butternut Squash and Kale Kadhi (Spiced Buttermilk Soup)

A warm, comforting butternut squash and kale soup made with a silky buttermilk and chickpea flour base instead of the usual broth or cream. Inspired by Maharashtrian kadhi, it brings together the sweetness of squash, earthy kale, tender peanuts, and the gentle tang of a lightly spiced buttermilk broth.

Enjoy it as a cozy fall soup on its own or spoon it over rice for a hearty, satisfying meal.

Beyond the Recipe

The Recipe Behind the Recipe

If kadhi is new to you, think of it as a light, tangy Indian soup made with yogurt or buttermilk and chickpea flour. Every region has its own version, and the Maharashtrian kadhi I grew up with is simple and brothy, with a little sweetness, green chilies, ginger, and fragrant spices.

This is the kadhi that inspired my fall version with butternut squash and kale. And there’s something special about seeing the original made by the person who taught me to love it.

If you make this concoction, I’d love to see it!
