From My Kitchen: The unexpected ingredient in my parathas

Straight from my kitchen, here's the latest recipe to make its way onto the blog. As always, it's rooted in Indian flavors, easy to make, and perfect for sharing around your table.

Spiced Sun-dried Tomato, Paneer & Spinach Stuffed Parathas

Indian-style whole wheat flatbreads stuffed with a mildly spiced filling made with paneer, spinach and sun-dried tomatoes.

Inspired by the duo of palak paneer and parathas, these wholesome flatbreads make a satisfying meal served with butter, yogurt, raita or pickle, and they're great for meal prep too. Enjoy them hot off the griddle or packed for a meal on the go.

Beyond the Recipe

Not a Traditional Indian Ingredient

Sun-dried tomatoes aren't a traditional Indian ingredient, but that doesn't mean they can't find a place in an Indian kitchen. Their concentrated savory flavor pairs surprisingly well with cumin, turmeric and garam masala. I love discovering ingredients that can cross those boundaries and bring something unexpected to familiar flavors.
