Batatyacha Kachrya with Leeks (Spiced Potato & Leek Stir Fry)

A comforting potato and leek stir fry made with simple Indian pantry spices and ready in about 20 minutes. This everyday vegetable dish combines familiar flavors with a thoughtful ingredient swap for a fresh take on a classic preparation.

Serve it with rotis or dal and rice for an easy, elevated everyday meal.

Why I Chose Leeks Instead of Onions?

Traditional Batatyacha Kachrya is made with red onions, so why did I choose leeks instead? It wasn't about reinventing a classic. It was about using an ingredient that has quietly become part of my California kitchen. Leeks have a milder, sweeter flavor than onions and pair beautifully with potatoes, adding depth without overpowering the simple spices that make this dish so comforting. Sometimes a recipe doesn't need a dramatic makeover. One thoughtful ingredient swap is enough.
