Tomato Kanda Koshimbir

A simple salad with juicy ripe tomatoes, sweet red onions, fresh herbs and crunchy roasted peanuts. With no cooking and just a little chopping and tossing, this is the kind of salad that comes together almost effortlessly.

Serve it with Indian meals, grilled meats or fish for a fresh, flavorful side dish.

When an Ingredient Chooses the Recipe

I don't always go to the farmers market with a recipe in mind. Sometimes I just walk around and wait for inspirations. This time, it was the tomatoes. Bright red, still on the vine, and impossible to walk past. I brought them home without a plan and then remembered this simple Maharashtrian salad I hadn't made in years.

That's one of my favorite things about seasonal cooking. Sometimes you don't choose the recipe. The ingredient does!
